Ingredients
– 1 lb lamb, cut into bite-sized pieces
– 8 oz wide rice noodles
– 2 tbsp cumin
– 3 cloves garlic, minced
– 1 tbsp soy sauce
– 1 tbsp rice vinegar
– 1 tsp chili garlic sauce
– 2 tbsp vegetable oil
– 1 cup thinly sliced scallions
– 1/4 cup fresh cilantro, chopped
Instructions
1. 1. Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions until al dente. Drain and rinse with cold water.
2. 2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the lamb and cook for 3-4 minutes, stirring occasionally, until browned on all sides.
3. 3. Add the cumin and garlic to the skillet and cook for 1 minute, until fragrant.
4. 4. Stir in the soy sauce, rice vinegar, and chili garlic sauce. Add the cooked noodles and toss to coat everything evenly.
5. 5. Remove from heat and stir in the scallions and cilantro.
6. 6. Serve the Cumin Lamb Noodles hot, garnished with additional scallions and cilantro if desired.
Notes
For a spicier version, add more chili garlic sauce. You can also use ground lamb or ground beef instead of lamb pieces.
