Ingredients

– 2 medium cucumbers, diced

– 1 red onion, finely chopped

– 2 tomatoes, diced

– 1/4 cup chopped fresh cilantro

– 2 tablespoons lime juice

– 1 tablespoon olive oil

– 1 teaspoon salt

– 1/2 teaspoon ground cumin


Instructions

1. – In a large bowl, combine the diced cucumbers, chopped onion, and diced tomatoes.

2. – Add the chopped cilantro, lime juice, olive oil, salt, and cumin. Stir to combine.

3. – Taste and adjust seasoning as needed, adding more lime juice, salt, or cumin to taste.

Notes

For a spicier salsa, add a finely chopped jalapeño or serrano pepper. This salsa is best made fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
