Ingredients
– 1 cup long-grain white rice
– 1 (15 oz) can black beans, drained and rinsed
– 1 lb pork shoulder, cut into 1-inch cubes
– 1 onion, diced
– 2 cloves garlic, minced
– 1 bell pepper, diced
– 1 (15 oz) can tomato sauce
– 1 tsp ground cumin
– 1 tsp dried oregano
– 1/2 tsp smoked paprika
– Salt and pepper to taste
– 1 cup shredded cheddar cheese
– Chopped fresh cilantro for garnish
Instructions
1. – Preheat oven to 375°F.
2. – Cook the rice according to package instructions.
3. – In a large skillet, brown the pork over medium-high heat until cooked through, 5-7 minutes. Remove pork and set aside.
4. – In the same skillet, sauté the onion, garlic, and bell pepper until softened, about 5 minutes.
5. – Stir in the tomato sauce, cumin, oregano, and paprika. Season with salt and pepper.
6. – Layer the cooked rice in the bottom of a 9×13 baking dish. Top with the pork, black beans, and tomato sauce mixture.
7. – Sprinkle the shredded cheddar cheese over the top.
8. – Bake for 20-25 minutes, until the cheese is melted and bubbly.
9. – Garnish with chopped fresh cilantro before serving.
Notes
