Description

Ingredients

– 3 lbs Yukon Gold potatoes, peeled and diced

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups chicken broth

– 2 cups heavy cream

– 1 tsp dried thyme

– 1 tsp dried parsley

– 1/2 tsp salt

– 1/4 tsp black pepper

– Toppings: crumbled bacon, shredded cheddar cheese, chopped chives


Instructions

1. – Add the diced potatoes, onion, and garlic to a crockpot.

2. – Pour in the chicken broth and stir to combine.

3. – Cook on low for 6-8 hours, or on high for 3-4 hours, until the potatoes are very soft.

4. – Use a potato masher or immersion blender to partially mash the potatoes, leaving some chunks.

5. – Stir in the heavy cream, thyme, parsley, salt, and pepper.

6. – Cook for an additional 30 minutes on low to heat through.

7. – Serve the crockpot potato soup hot, topped with crumbled bacon, shredded cheddar cheese, and chopped chives.

Notes

For a thicker soup, use a potato masher to mash more of the potatoes. You can also add diced cooked ham or shredded chicken for extra protein. This soup freezes well for up to 3 months.
