Ingredients
– 3 lbs beef chuck roast, cut into 2-inch cubes
– 1 large onion, diced
– 6 garlic cloves, minced
– 2 tbsp chili powder
– 2 tsp ground cumin
– 1 tsp dried oregano
– 1 tsp smoked paprika
– 1 tsp salt
– 1/2 tsp black pepper
– 4 cups beef broth
– 2 bay leaves
– Lime wedges, chopped cilantro, and warm tortillas for serving
Instructions
1. 1. In a large skillet, sear the beef cubes over high heat until browned on all sides, about 2-3 minutes per side. Transfer the seared beef to a crockpot.
2. 2. Add the diced onion, minced garlic, chili powder, cumin, oregano, smoked paprika, salt, and black pepper to the crockpot. Stir to combine.
3. 3. Pour in the beef broth and add the bay leaves.
4. 4. Cover the crockpot and cook on low for 8-10 hours, or on high for 4-6 hours, until the beef is very tender and shreds easily.
5. 5. Remove the bay leaves. Shred the beef using two forks, then stir it back into the broth.
