Ingredients

– 1 lb boneless, skinless chicken breasts

– 4 cups low-sodium chicken broth

– 2 cups water

– 2 large carrots, peeled and sliced

– 2 celery stalks, sliced

– 1 onion, diced

– 3 garlic cloves, minced

– 8 oz egg noodles

– 1 tsp dried thyme

– 1 tsp dried parsley

– Salt and pepper to taste


Instructions

1. – Place the chicken, broth, water, carrots, celery, onion, and garlic in a crockpot.

2. – Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.

3. – Remove the chicken from the crockpot and shred or chop it.

4. – Add the shredded chicken, egg noodles, thyme, and parsley to the crockpot.

5. – Cover and cook on high for an additional 20-30 minutes, until the noodles are tender.

6. – Season with salt and pepper to taste.

7. – Serve hot and enjoy!

Notes

For a thicker soup, you can add a cornstarch slurry towards the end of cooking. Store leftovers in the refrigerator for up to 4 days.
