Ingredients

– 2 lbs boneless, skinless chicken breasts, cubed

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups chicken broth

– 1 cup heavy cream

– 1 cup shredded parmesan cheese

– 1 tsp dried basil

– 1 tsp dried oregano

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. – Place the cubed chicken, diced onion, and minced garlic in a slow cooker.

2. – Pour in the chicken broth and stir to combine.

3. – Cover and cook on low for 6-8 hours or on high for 3-4 hours.

4. – During the last 30 minutes of cooking, stir in the heavy cream and parmesan cheese.

5. – Season with dried basil, oregano, salt, and pepper.

6. – Stir until the cheese is melted and the soup is heated through.

7. – Serve hot, garnished with additional parmesan cheese and fresh herbs if desired.

Notes

For a thicker consistency, you can mash some of the cooked chicken against the side of the slow cooker. This soup also freezes well for later enjoyment.
