Ingredients
– 1 lb boneless, skinless chicken breasts
– 1 tbsp olive oil
– 1 cup heavy cream
– 1/2 cup sun-dried tomatoes, chopped
– 2 cloves garlic, minced
– 2 cups baby spinach
– 1/2 cup grated Parmesan cheese
– 1 tsp dried basil
– 1/2 tsp dried oregano
– Salt and pepper to taste
Instructions
1. – Season the chicken breasts with salt and pepper.
2. – Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes per side until golden brown.
3. – Remove the chicken from the skillet and set aside.
4. – In the same skillet, add the heavy cream, sun-dried tomatoes, and garlic. Bring the mixture to a simmer, stirring occasionally.
5. – Add the spinach and Parmesan cheese to the skillet. Stir until the spinach is wilted and the cheese is melted.
6. – Return the chicken to the skillet and spoon the creamy sauce over the top.
7. – Sprinkle with the dried basil and oregano.
8. – Serve immediately, garnished with additional Parmesan cheese and fresh basil if desired.
Notes
This dish can be customized to your taste by adding or substituting different vegetables, such as broccoli, bell peppers, or mushrooms. For a heartier meal, serve over pasta or mashed potatoes.
