Ingredients

– 1 lb. peeled and deveined shrimp

– 4 tbsp. unsalted butter

– 1 cup heavy cream

– 3 cloves garlic, minced

– 1/2 cup sun-dried tomatoes, chopped

– 1/4 cup grated Parmesan cheese

– 1/4 cup fresh basil, chopped

– Salt and pepper to taste


Instructions

1. – In a large skillet, melt the butter over medium-high heat.

2. – Add the shrimp and sauté for 2-3 minutes until they start to turn pink.

3. – Pour in the heavy cream and stir to combine. Reduce heat to medium-low.

4. – Stir in the garlic, sun-dried tomatoes, Parmesan, and basil. Season with salt and pepper.

5. – Simmer for 5-7 minutes, stirring occasionally, until the sauce has thickened and the shrimp are cooked through.

Notes

For a spicier version, add a pinch of red pepper flakes. You can also use fresh tomatoes instead of sun-dried. Leftover shrimp can be stored in an airtight container in the fridge for up to 3 days.
