This creamy potato soup is a comforting and delicious classic that’s easy to make at home. Velvety smooth and packed with flavor, it’s the perfect cozy meal for a chilly day.
Ingredients
– 2 lbs potatoes, peeled and diced
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups chicken or vegetable broth
– 1 cup heavy cream
– 2 tbsp butter
– Salt and pepper to taste
– Chopped chives, for garnish
Instructions
1. 1. In a large pot, melt the butter over medium heat. Add the diced onion and garlic and sauté for 3-4 minutes until fragrant.
2. 2. Add the diced potatoes and chicken/vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the potatoes are tender.
3. 3. Using an immersion blender, purée the soup until smooth and creamy. Alternatively, transfer the soup to a regular blender and blend in batches.
4. 4. Stir in the heavy cream and season with salt and pepper to taste.
5. 5. Serve hot, garnished with chopped chives.
Notes
For a thicker soup, you can mash some of the potatoes with a potato masher after blending. You can also customize the flavor by adding herbs, spices, or cheese. Leftover soup can be stored in the fridge for up to 4 days.
