Ingredients
– 1 lb Italian sausage, casings removed
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups chicken broth
– 1 cup heavy cream
– 1 cup grated Parmesan cheese, plus more for serving
– 8 oz ditalini pasta
– Fresh parsley, chopped, for garnish
Instructions
1. – In a large pot or Dutch oven, cook the sausage over medium heat, breaking it up as it cooks, until browned, about 5-7 minutes.
2. – Add the onion and garlic to the pot and cook until softened, about 3-4 minutes.
3. – Pour in the chicken broth and bring the mixture to a boil.
4. – Add the ditalini pasta and cook according to package instructions, about 8-10 minutes, until al dente.
5. – Reduce the heat to low and stir in the heavy cream and 1 cup of Parmesan cheese. Simmer for 5 minutes, stirring occasionally, until the cheese has melted and the soup has thickened.
6. – Taste and season with salt and pepper as needed.
7. – Serve the Creamy Parmesan Sausage Ditalini Soup hot, garnished with chopped parsley and additional Parmesan cheese.
Notes
– For a thicker soup, use less broth or simmer the soup for a few extra minutes.
– Feel free to experiment with different types of sausage, such as spicy Italian or smoked sausage.
– Store any leftover soup in an airtight container in the refrigerator for up to 4 days.
