Ingredients
– 3 lbs Yukon Gold potatoes, peeled and cut into 1-inch cubes
– 1 cup whole milk
– 8 tbsp unsalted butter, softened
– 1 tsp salt
– 1/4 tsp black pepper
Instructions
1. – Place the cubed potatoes in a large pot and cover with cold water. Bring to a boil over high heat.
2. – Reduce heat to medium-low and simmer for 15-20 minutes, until the potatoes are fork-tender.
3. – Drain the potatoes and return them to the pot. Mash them with a potato masher or ricer.
4. – Add the milk, butter, salt, and pepper, and continue mashing and stirring until the potatoes are smooth and creamy.
