Ingredients

– 1 lb fresh asparagus, trimmed and chopped

– 1 cup fresh or frozen peas

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups vegetable or chicken broth

– 1 cup heavy cream

– 2 tbsp olive oil

– Salt and pepper to taste

– Chopped fresh parsley or chives for garnish


Instructions

1. 1. In a large saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

2. 2. Add the minced garlic and cook for 1 minute, stirring constantly, until fragrant.

3. 3. Add the chopped asparagus and peas to the pan. Pour in the broth and bring the mixture to a boil.

4. 4. Reduce the heat to medium-low and let the soup simmer for 10-12 minutes, or until the asparagus is tender.

5. 5. Use an immersion blender to purée the soup until smooth and creamy. Alternatively, carefully transfer the soup to a blender and blend until desired consistency.

Notes
