Description

Indulge in the ultimate comfort food with this Creamy Alfredo Lasagna Soup, a rich and decadent one-pot meal that’s ready in just 30 minutes.

Ingredients

– 8 oz. lasagna noodles, broken into pieces

– 4 cups chicken or vegetable broth

– 1 cup whole milk

– 1 cup heavy cream

– 1 cup grated Parmesan cheese, plus more for serving

– 2 cloves garlic, minced

– 1 tsp dried parsley

– 1/2 tsp dried basil

– 1/4 tsp ground nutmeg

– Salt and pepper to taste

Instructions

1. 1. In a large pot or Dutch oven, bring the broth to a simmer over medium heat.

2. 2. Add the broken lasagna noodles and cook for 8-10 minutes, until al dente.

3. 3. Stir in the milk, heavy cream, 1 cup of Parmesan, garlic, parsley, basil, and nutmeg. Season with salt and pepper to taste.

4. 4. Reduce heat to low and let the soup simmer for 5-10 minutes, stirring occasionally, until thickened to your desired consistency.

5. 5. Serve hot, garnished with additional Parmesan cheese and fresh parsley, if desired.

Notes

For a creamier soup, use a full cup of heavy cream and reduce the milk. You can also add cooked Italian sausage or ground beef for extra protein.
