Ingredients

– 2 tbsp unsalted butter

– 1 onion, diced

– 3 cloves garlic, minced

Instructions

1. – Melt the butter in a large pot over medium heat.

2. – Add the diced onion and minced garlic, and sauté for 2-3 minutes until fragrant.

3. – Add the chopped broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer for 10-12 minutes, until the broccoli is tender.

4. – Carefully transfer the soup to a blender and blend until smooth and creamy.

5. – Return the blended soup to the pot and stir in the heavy cream, salt, and black pepper.

6. – Reheat the soup over medium heat, stirring occasionally, until heated through.

Notes

For a thicker consistency, you can add an extra 1/2 cup of heavy cream. Adjust seasoning to taste. Store leftovers in the refrigerator for up to 4 days.
