These Cranberry Sauce Meatballs are the ultimate holiday or party appetizer. Juicy, tender meatballs are smothered in a sweet and tangy cranberry sauce glaze for a flavor combination that’s simply irresistible.
Ingredients
– 1 lb ground beef
– 1 cup breadcrumbs
– 2 eggs
– 1 onion, finely chopped
– 1 tsp salt
– 1/2 tsp black pepper
– 1 cup cranberry sauce
– 2 tbsp brown sugar
– 1 tbsp Dijon mustard
Instructions
1. – Preheat oven to 375°F.
2. – In a large bowl, combine the ground beef, breadcrumbs, eggs, onion, salt, and pepper. Mix until well combined.
3. – Roll the mixture into 1-inch meatballs and place them on a baking sheet.
4. – Bake for 20-25 minutes, until the meatballs are cooked through.
5. – In a saucepan, combine the cranberry sauce, brown sugar, and Dijon mustard. Bring to a simmer and cook for 5 minutes, stirring occasionally.
6. – Add the cooked meatballs to the cranberry sauce and toss to coat.
7. – Serve the Cranberry Sauce Meatballs warm, garnished with fresh thyme if desired.
Notes
For a thicker sauce, simmer the cranberry mixture for a few extra minutes. You can also use frozen meatballs to save time. Adjust the cooking time accordingly.
