Description

Indulge in the comforting flavors of Cranberry Rosemary One Pan Chicken, a delightful main dish that combines tender chicken with the tart sweetness of cranberries and the earthy aroma of fresh rosemary. This easy-to-make recipe is perfect for a cozy weeknight dinner or a special occasion.

Ingredients

– 4 boneless, skinless chicken breasts

– 1 cup fresh cranberries

– 2 tablespoons chopped fresh rosemary

– 2 tablespoons olive oil

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 1/4 cup chicken broth

Instructions

1. 1. Preheat your oven to 400°F (200°C).

2. 2. Pat the chicken breasts dry with paper towels and season them with salt and pepper.

3. 3. Heat the olive oil in a large, oven-safe skillet over medium-high heat.

4. 4. Add the chicken breasts to the skillet and cook for 3-4 minutes per side, or until they’re golden brown.

5. 5. Scatter the fresh cranberries and chopped rosemary around the chicken in the skillet.

6. 6. Pour the chicken broth into the skillet.

7. 7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cranberries have softened.

8. 8. Remove the skillet from the oven and let the chicken rest for 5 minutes before serving.

Notes

For added flavor, you can substitute orange juice for the chicken broth. You can also use frozen cranberries if fresh are not available. Serve this dish with roasted potatoes or a fresh green salad for a complete meal.
