Description

Indulge in the delightful combination of tart cranberries and sweet pineapple in this vibrant and refreshing Cranberry Pineapple Jello Salad. Perfect for holiday gatherings, potlucks, or any time you need a delicious and easy-to-make dessert.


Ingredients

– 1 (12 oz) bag fresh or frozen cranberries

– 1 (20 oz) can crushed pineapple, drained

– 1 (3 oz) package cherry or strawberry Jello

– 1 cup boiling water

– 1/2 cup white sugar


Instructions

1. – In a medium saucepan, combine the cranberries and 1/2 cup of water. Bring to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally, until the cranberries have burst.

2. – Drain the cranberries, reserving the liquid. Add enough water to the reserved liquid to make 1 cup.

3. – In a medium bowl, dissolve the Jello in the 1 cup of liquid.

4. – Stir in the drained cranberries and the crushed pineapple.

5. – Pour the mixture into a 9×13 inch baking dish or individual serving cups.

6. – Refrigerate for at least 4 hours or until set.

Notes

For a creamier texture, you can fold in 1 cup of sour cream or whipped cream before chilling. Garnish with fresh mint leaves or a dollop of whipped cream before serving.
