Ingredients

– 1.5 lbs boneless, skinless chicken thighs

– 1 cup fresh cranberries

– 1/2 cup orange juice

– 1/4 cup brown sugar

– 2 tbsp balsamic vinegar

– 2 tsp Dijon mustard

– 1 tsp dried thyme

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. – Pat the chicken thighs dry and season with salt and pepper.

2. – Heat a large skillet over medium-high heat and add the chicken. Cook for 3-4 minutes per side until lightly browned.

3. – Remove the chicken from the skillet and set aside.

4. – In the same skillet, add the cranberries, orange juice, brown sugar, balsamic vinegar, Dijon mustard, thyme, salt, and pepper. Stir to combine.

5. – Return the chicken to the skillet and bring the mixture to a simmer.

6. – Reduce heat to medium-low and let the chicken simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.

7. – Serve the Cranberry Orange Chicken immediately, garnished with fresh orange slices and chopped parsley if desired.
