Description
Cranberry Brie Bites are a delightful holiday appetizer that combine the sweet-tart flavors of cranberries with the creamy richness of baked brie. Wrapped in a flaky pastry shell, these bite-sized treats are the perfect balance of savory and sweet, making them an irresistible addition to any holiday spread.
Ingredients
– 1 sheet puff pastry, thawed
– 8 oz brie cheese, cut into 1-inch cubes
– 1 cup fresh or frozen cranberries
– 1/4 cup granulated sugar
– 1 tbsp water
– 1 egg, beaten with 1 tbsp water for egg wash
Instructions
1. – Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. – In a small saucepan, combine the cranberries, sugar, and 1 tbsp water. Cook over medium heat, stirring occasionally, until the cranberries have burst and the mixture has thickened, about 10 minutes. Allow to cool slightly.
3. – Roll out the puff pastry on a lightly floured surface into a 12×12-inch square. Cut into 16 equal squares.
4. – Place a cube of brie in the center of each pastry square. Top each with about 1 tsp of the cranberry mixture.
5. – Fold the pastry over the filling to create a triangle, pressing the edges to seal. Transfer the filled pastries to the prepared baking sheet.
6. – Brush the tops of the pastries with the egg wash.
7. – Bake for 18-20 minutes, or until the pastry is golden brown. Serve warm.
Notes
– For a creamier brie experience, use a soft, ripe brie.
– Substitute other types of cheese, such as goat cheese or cream cheese, if desired.
– Add a sprinkle of chopped walnuts or pecans for extra crunch.
– These bites can be made ahead and frozen, then baked straight from the freezer when ready to serve.
