Ingredients
– 3 lb beef roast (such as chuck roast or rump roast)
– 1 cup fresh or frozen cranberries
– 1/2 cup balsamic vinegar
– 3 cloves garlic, minced
– 2 tbsp brown sugar
– 1 tsp dried thyme
– 1/2 tsp salt
– 1/4 tsp black pepper
Instructions
1. 1. Preheat oven to 375°F.
2. 2. In a small bowl, combine the cranberries, balsamic vinegar, garlic, brown sugar, thyme, salt, and pepper.
3. 3. Place the beef roast in a large oven-safe baking dish or roasting pan. Pour the cranberry balsamic mixture over the top, making sure to coat the roast evenly.
4. 4. Roast the beef for 25-30 minutes per pound, or until it reaches your desired doneness. Baste the roast with the cranberry balsamic sauce every 15 minutes.
