Ingredients
– 1 lb crab meat, lump or claw
– 1 onion, diced
– 2 celery stalks, diced
– 3 garlic cloves, minced
– 4 cups chicken or vegetable broth
– 1 cup heavy cream
– 2 tbsp butter
– 1 tsp Old Bay seasoning
– 1/2 tsp dried thyme
– Salt and pepper to taste
– Chopped parsley for garnish
Instructions
1. – Melt the butter in a large pot over medium heat.
2. – Add the diced onion, celery, and minced garlic. Sauté for 5-7 minutes until the vegetables are softened.
3. – Pour in the broth and heavy cream. Bring the mixture to a simmer.
4. – Gently stir in the crab meat, Old Bay seasoning, and dried thyme. Season with salt and pepper to taste.
5. – Simmer the soup for 10-15 minutes, stirring occasionally, until the flavors have melded and the soup has thickened slightly.
6. – Ladle the crab soup into bowls and garnish with chopped parsley before serving.

– For a thicker soup, you can blend a portion of the soup in a blender or use an immersion blender to puree some of the vegetables.
