Description

Ingredients

– 1 lb beef stew meat, cubed

– 1 onion, diced

– 3 carrots, peeled and sliced

– 2 celery stalks, sliced

– 3 garlic cloves, minced

– 1 (15 oz) can diced tomatoes

– 4 cups beef broth

– 2 tbsp Worcestershire sauce

– 1 tsp dried thyme

– 1 tsp dried oregano

– Salt and pepper to taste


Instructions

1. – In a large pot or Dutch oven, brown the beef over medium-high heat until no longer pink.

2. – Add the onion, carrots, and celery, and sauté until the vegetables are tender, about 5-7 minutes.

3. – Stir in the garlic and cook for an additional minute.

4. – Pour in the diced tomatoes, beef broth, Worcestershire sauce, thyme, and oregano. Season with salt and pepper.

5. – Bring the soup to a boil, then reduce the heat and simmer for 30-40 minutes, or until the beef is tender.

6. – Serve hot, garnished with fresh herbs if desired. Enjoy with a side of crusty bread.

Notes

For a thicker soup, you can mash some of the vegetables against the side of the pot. You can also adjust the seasonings to your taste.
