Description

Cowboy Caviar (also known as Texas Caviar) is a vibrant and zesty dip that combines fresh vegetables, beans, and a tangy dressing. This quick and easy 5-minute appetizer is perfect for parties, gatherings, and snacking.


Ingredients

– 1 (15 oz) can black beans, drained and rinsed

– 1 (15 oz) can pinto beans, drained and rinsed

– 1 cup corn kernels (fresh or frozen)

– 1 red bell pepper, diced

– 1 yellow bell pepper, diced

– 1/2 red onion, diced

– 1/4 cup chopped cilantro

– 2 tablespoons olive oil

– 2 tablespoons red wine vinegar

– 1 tablespoon lime juice

– 1 teaspoon cumin

– 1 teaspoon chili powder

– 1/2 teaspoon garlic powder

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. 1. In a large bowl, combine the black beans, pinto beans, corn, bell peppers, onion, and cilantro.

2. 2. In a small bowl, whisk together the olive oil, red wine vinegar, lime juice, cumin, chili powder, garlic powder, salt, and black pepper.

3. 3. Pour the dressing over the vegetable and bean mixture and gently toss to combine.

4. 4. Serve the Cowboy Caviar dip immediately with tortilla chips, crostini, or your favorite dipping companions.

Notes

– For a creamier texture, you can mash some of the beans before adding them to the dip.

– Adjust the seasoning to your taste, adding more lime juice, chili powder, or salt as desired.

– The dip can be made ahead of time and refrigerated for up to 3 days.
