Ingredients
– 1 cup rolled oats
– 1 cup all-purpose flour
– 1/2 cup unsalted butter, softened
– 1/2 cup brown sugar
– 1/4 cup white sugar
– 1 egg
– 1 teaspoon vanilla extract
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1/2 cup unsweetened shredded coconut
– 1/2 cup slivered almonds
Instructions
1. 1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. 2. In a medium bowl, combine the rolled oats, flour, baking soda, and salt. Set aside.
3. 3. In a large bowl, cream the softened butter with the brown sugar and white sugar until light and fluffy.
4. 4. Beat in the egg and vanilla extract until well incorporated.
5. 5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. 6. Fold in the shredded coconut and slivered almonds.
7. 7. Scoop the dough by the tablespoonful onto the prepared baking sheet, spacing them about 2 inches apart.
8. 8. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are still slightly soft.
9. 9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Store the Copycat Costco Aussie Bites in an airtight container at room temperature for up to 1 week. You can also freeze them for up to 3 months.
