Description

Indulge in the cool, creamy goodness of this refreshing Cold Peanut Noodle Salad. Packed with tender noodles, crunchy veggies, and a delightful peanut dressing, this dish is a flavor-packed delight perfect for a light lunch or a satisfying side.


Ingredients

– 8 oz. cooked linguine or spaghetti, cooled

– 1 cup shredded cabbage

– 1 cup shredded carrots

– 1/2 cup sliced cucumber

– 1/4 cup chopped green onions

– 1/4 cup chopped cilantro

– 1/4 cup creamy peanut butter

– 2 tbsp soy sauce

– 2 tbsp rice vinegar

– 1 tbsp lime juice

– 1 tsp sesame oil

– 1 tsp honey

– 1/4 tsp red pepper flakes (optional)


Instructions

1. – In a large bowl, combine the cooked and cooled linguine, cabbage, carrots, cucumber, green onions, and cilantro.

2. – In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, lime juice, sesame oil, and honey until well combined.

3. – Pour the peanut dressing over the noodle and vegetable mixture and toss to coat evenly.

4. – If desired, sprinkle with red pepper flakes for a touch of heat.

5. – Chill for at least 30 minutes before serving to allow the flavors to meld.

Notes

– For a heartier meal, add grilled or sautéed chicken or tofu.

– Swap out the vegetables based on your preferences or what’s in season.
