Ingredients

– 2 pounds potatoes, peeled and cut into 1-inch pieces

– 1 cup milk

– 4 tablespoons unsalted butter

– 2 leeks, thinly sliced

– 1 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. – Bring a large pot of salted water to a boil. Add the potatoes and cook until tender, about 15 minutes.

2. – Drain the potatoes and return them to the pot. Mash the potatoes with the milk and 2 tablespoons of the butter until smooth and creamy.

3. – In a skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the leeks and cook, stirring occasionally, until softened, about 5 minutes.

4. – Fold the leeks into the mashed potatoes and season with salt and pepper.

5. – Serve hot, garnished with additional butter, if desired.

Notes

For a richer flavor, use heavy cream instead of milk. You can also add grated cheddar cheese or chopped chives to the colcannon for extra flavor.
