Description

Ingredients

– 1/4 cup chia seeds

– 1 cup brewed coffee, cooled

– 1 cup milk or plant-based milk

– 2 tablespoons honey or maple syrup (optional)

– 1/2 teaspoon vanilla extract


Instructions

1. – In a medium bowl, combine the chia seeds, coffee, milk, and sweetener (if using). Stir well to combine.

2. – Cover and refrigerate for at least 4 hours or up to 5 days, stirring occasionally, until thickened to a pudding-like consistency.

3. – When ready to serve, give the pudding a final stir. Portion into bowls or glasses and top with your desired toppings, such as chopped nuts, fresh berries, or a sprinkle of cocoa powder.

Notes

– For a thicker pudding, use 1/3 cup chia seeds.
