Ingredients
– 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
– 1 (13.5 oz) can coconut milk
– 1 cup chicken broth
– 2 tablespoons lime juice
– 2 teaspoons curry powder
– 1 teaspoon ground ginger
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 cloves garlic, minced
– 1 tablespoon vegetable oil
– Chopped fresh cilantro for garnish
Instructions
1. – Heat the vegetable oil in a large skillet over medium-high heat.
2. – Add the chicken and cook for 3-4 minutes, or until lightly browned on all sides.
3. – Add the garlic and cook for 1 minute, stirring constantly.
4. – Pour in the coconut milk, chicken broth, lime juice, curry powder, ginger, salt, and pepper. Stir to combine.

Notes
