Description

Indulge in the delightful combination of juicy plums and creamy almond filling encased in a flaky, buttery crust with this irresistible Plum Galette. This easy-to-make dessert is perfect for any occasion.


Ingredients

– 1 1/2 cups all-purpose flour

– 1/2 teaspoon salt

– 1 cup (2 sticks) unsalted butter, chilled and cubed

– 1/4 cup ice water

– 1 cup almond flour

– 1/2 cup granulated sugar

– 1/4 cup unsalted butter, softened

– 1 large egg

– 1 teaspoon vanilla extract

– 1/4 teaspoon almond extract

– 6-8 plums, pitted and sliced

– 1 tablespoon turbinado sugar (for sprinkling)


Instructions

1. – In a food processor, pulse the all-purpose flour and salt. Add the chilled butter cubes and pulse until the mixture resembles coarse crumbs.

2. – Add the ice water a tablespoon at a time, pulsing until the dough just begins to hold together. Gather the dough into a disc, wrap in plastic, and refrigerate for at least 1 hour.

3. – In a medium bowl, mix the almond flour, granulated sugar, softened butter, egg, vanilla, and almond extract until well combined.

4. – On a lightly floured surface, roll the chilled dough into a 12-inch circle, about 1/4-inch thick. Transfer to a parchment-lined baking sheet.

5. – Spread the almond cream filling onto the dough, leaving a 1-inch border. Arrange the plum slices on top of the filling.

6. – Fold the outer 1-inch of the dough over the filling, pleating as you go. Sprinkle the turbinado sugar over the exposed plums and dough.

7. – Bake at 400°F for 35-40 minutes, until the crust is golden brown and the plums are tender. Allow to cool slightly before slicing and serving.

Notes

For a more rustic look, you can leave the galette in a free-form shape instead of folding the edges. The almond cream filling can also be used as a topping for other fruit tarts or pies.
