Ingredients

– 1 lb ground beef

– 1 lb Italian sausage, casings removed

– 1 onion, diced

– 3 cloves garlic, minced

– 2 cans (28 oz each) crushed tomatoes

– 4 cups beef broth

– 2 cups water

– 8 oz lasagna noodles, broken into 1-inch pieces

– 1 tsp dried oregano

– 1 tsp dried basil

– 1/2 tsp red pepper flakes (optional)

– Salt and pepper to taste

– 1 cup shredded mozzarella cheese

– 1/2 cup grated Parmesan cheese

– Chopped fresh basil for garnish


Instructions

1. – In a large skillet, cook the ground beef and Italian sausage over medium-high heat until browned and crumbled, 5-7 minutes. Drain excess fat.

2. – Add the onion and garlic to the skillet and cook for 2-3 minutes until fragrant.

3. – Transfer the meat mixture to a crockpot. Add the crushed tomatoes, beef broth, water, broken lasagna noodles, oregano, basil, and red pepper flakes (if using). Season with salt and pepper to taste.

4. – Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the noodles are tender.

5. – Stir in the mozzarella and Parmesan cheeses during the last 30 minutes of cooking.

6. – Ladle the lasagna soup into bowls and garnish with fresh chopped basil before serving.

Notes

– For a thicker soup, use less water or broth.

– Adjust spices to your taste preferences.

– Top with additional cheese, fresh herbs, or crushed red pepper flakes.
