Description

Ingredients

– 3 eggs

– 3/4 cup granulated sugar

– 1/4 cup all-purpose flour

– 1/4 cup cocoa powder

– 1/2 teaspoon baking powder

– 1/4 teaspoon salt

– 1 cup powdered sugar, plus more for dusting

– 8 ounces cream cheese, softened

– 1/2 cup unsalted butter, softened

– 1 teaspoon vanilla extract


Instructions

1. – Preheat oven to 375°F. Line a 15×10-inch jelly roll pan with parchment paper.

2. – In a large bowl, beat the eggs and granulated sugar until light and fluffy.

3. – In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.

4. – Gently fold the dry ingredients into the egg mixture until just combined.

5. – Spread the batter evenly into the prepared pan.

6. – Bake for 12-15 minutes, or until the cake is lightly golden and springs back when touched.

7. – While the cake is baking, lay a clean kitchen towel on a flat surface and dust it generously with powdered sugar.

8. – As soon as the cake comes out of the oven, carefully invert it onto the prepared towel. Gently peel off the parchment paper.

9. – Starting from the short end, tightly roll up the cake in the towel. Allow to cool completely.

10. – In a medium bowl, beat the cream cheese and butter until smooth and creamy. Stir in the vanilla.

11. – Unroll the cooled cake and spread the cream cheese filling evenly over the surface.

12. – Carefully re-roll the cake without the towel.

13. – Dust the top with powdered sugar and refrigerate for at least 1 hour before serving.

Notes

For best results, use room temperature ingredients. Substitute other fillings, such as whipped cream or fruit preserves, if desired. Cake can be made a day in advance and refrigerated until ready to serve.
