Description

Churu Chicken Amarillo is a delectable Latin American-inspired chicken dish that’s packed with bold, zesty flavors. Tender chicken thighs are simmered in a vibrant sauce made with onions, garlic, and a blend of aromatic spices, creating a mouthwatering meal that’s ready in just 30 minutes.


Ingredients

– 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces

– 1 yellow onion, diced

– 3 cloves garlic, minced

– 1 tsp ground cumin

– 1 tsp smoked paprika

– 1 tsp dried oregano

– 1/2 tsp cayenne pepper (or to taste)

– 1 cup chicken broth

– 1 tbsp tomato paste

– 1 tbsp lime juice

– Salt and pepper to taste

– Chopped fresh cilantro for garnish


Instructions

1. – Season the chicken with salt and pepper.

2. – In a large skillet over medium-high heat, sear the chicken until browned on all sides, about 5 minutes. Transfer the chicken to a plate.

3. – Reduce the heat to medium and add the onion to the skillet. Cook for 3-4 minutes, until softened.

4. – Add the garlic, cumin, paprika, oregano, and cayenne. Cook for 1 minute, until fragrant.

5. – Stir in the chicken broth, tomato paste, and lime juice. Bring the mixture to a simmer.

6. – Return the seared chicken to the skillet and simmer for 15-20 minutes, until the chicken is cooked through and the sauce has thickened.

7. – Taste and adjust seasoning as needed.

8. – Serve the Churu Chicken Amarillo hot, garnished with fresh cilantro.

Notes

– For a spicier dish, increase the amount of cayenne pepper.
