Ingredients
– 2 packages (16 oz each) butter cookies
– 24 oz white chocolate, chopped
– 1 cup heavy cream
– 1 tsp vanilla extract
– 1 cup crushed peppermint candies
Instructions
1. 1. Preheat oven to 350°F. Grease a 9×13 inch baking dish.
2. 2. In a medium saucepan, combine the white chocolate and heavy cream. Heat over medium, stirring frequently, until the chocolate is melted and the mixture is smooth. Remove from heat and stir in the vanilla.
3. 3. Arrange a single layer of butter cookies in the prepared baking dish. Top with half of the white chocolate mixture, spreading it evenly. Sprinkle with half of the crushed peppermint.
