Ingredients
– 1 1/2 cups graham cracker crumbs
– 5 tablespoons unsalted butter, melted
– 1 cup granulated sugar
– 3 large eggs
– 1/2 cup unsweetened cocoa powder
– 1/4 teaspoon salt
– 1 cup heavy cream
– 1 teaspoon vanilla extract
Instructions
1. – Preheat oven to 350°F.
2. – In a medium bowl, mix together the graham cracker crumbs and melted butter until well combined.
3. – Press the mixture into the bottom and up the sides of a 9-inch pie dish.
4. – Bake for 8 minutes, then let cool completely.
5. – In a medium saucepan, whisk together the sugar, eggs, cocoa powder, and salt. Cook over medium heat, stirring constantly, until thickened, about 5-7 minutes.
6. – Remove from heat and let cool completely.
7. – In a large bowl, beat the heavy cream and vanilla until stiff peaks form.
8. – Fold the whipped cream into the cooled chocolate mixture until well combined.
9. – Pour the filling into the prepared graham cracker crust and smooth the top.
10. – Refrigerate for at least 2 hours, or until set.

Notes
