Ingredients
– 3 large egg whites, at room temperature
– 3/4 cup (150g) granulated sugar
– 1/4 cup (25g) unsweetened cocoa powder
– 1/2 cup (90g) semi-sweet chocolate chips
Instructions
1. 1. Preheat oven to 350°F (177°C). Line two baking sheets with parchment paper.
2. 2. In a large bowl, beat the egg whites with an electric mixer until soft peaks form. Gradually add the sugar, beating until stiff, glossy peaks form.
3. 3. Gently fold in the cocoa powder until just combined. Fold in the chocolate chips.
4. 4. Scoop heaping tablespoons of the meringue mixture onto the prepared baking sheets, spacing them about 2 inches apart.
5. 5. Bake for 12-15 minutes, until the cookies are set and lightly cracked on top. Allow to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
For best results, make sure the egg whites are at room temperature before beating. The cookies can be stored in an airtight container at room temperature for up to 1 week.
