Description

This Chicken Zucchini Stir Fry is a quick and easy weeknight dinner that’s packed with flavor. Tender chicken, crisp zucchini, and a savory sauce come together in a delicious 30-minute meal.


Ingredients

– 1 lb boneless, skinless chicken breasts, diced

– 2 medium zucchini, sliced

– 3 cloves garlic, minced

– 2 tbsp soy sauce

– 1 tbsp rice vinegar

– 1 tsp sesame oil

– 1 tsp cornstarch

– 1 tbsp vegetable oil

– Salt and pepper to taste


Instructions

1. – Heat the vegetable oil in a large skillet or wok over high heat.

2. – Add the diced chicken and stir-fry until cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.

3. – Add the sliced zucchini to the hot pan and stir-fry for 3-4 minutes, until crisp-tender.

4. – Add the minced garlic and stir-fry for 1 minute, until fragrant.

5. – In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and cornstarch.

6. – Pour the sauce into the pan and let it simmer for 1-2 minutes, until thickened.

7. – Return the cooked chicken to the pan and toss to combine.

8. – Season with salt and pepper to taste.

9. – Serve hot, over steamed rice if desired.

Notes

For a spicier dish, add a teaspoon of red pepper flakes or a squirt of sriracha to the sauce. Substitute other vegetables like bell peppers or snap peas if desired.
