Description
Tender, herb-seasoned chicken baked to perfection with fragrant rice and a cool, creamy tzatziki sauce. This one-pan Chicken Tzatziki Rice Bake is a family-friendly, easy-to-make dinner that’s sure to become a new favorite!
Ingredients
– 1 lb boneless, skinless chicken breasts, cubed
– 1 cup uncooked long-grain white rice
– 1 cup plain Greek yogurt
– 1 cucumber, peeled, seeded, and grated
– 2 cloves garlic, minced
– 2 tbsp fresh dill, chopped
– 1 tsp dried oregano
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1 cup chicken broth
Instructions
1. – Preheat oven to 375°F.
2. – In a large bowl, combine the yogurt, grated cucumber, garlic, dill, oregano, salt, and pepper. Mix well and set aside.
3. – In a separate bowl, toss the cubed chicken with a pinch of salt and pepper.
4. – Heat a large, oven-safe skillet over medium-high heat. Add the chicken and sear on all sides until lightly browned, about 3-4 minutes.
5. – Pour the chicken broth into the skillet and stir in the uncooked rice.
6. – Dollop the tzatziki sauce over the top of the chicken and rice, then use a spoon to gently spread it out.
7. – Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the rice is tender and the chicken is cooked through.
8. – Remove from oven and let stand for 5 minutes before serving.
Notes
For a creamier tzatziki sauce, add an extra 1/4 cup of Greek yogurt. You can also garnish the dish with fresh lemon wedges and extra dill.
