Ingredients
– 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces

– 1 15-oz can hominy, drained and rinsed
– 4 cups chicken broth
– 1 tsp ground cumin
– 1 tsp dried oregano
– 1/2 tsp ground coriander
– Salt and pepper to taste
– Chopped fresh cilantro, for garnish
– Lime wedges, for serving
Instructions
