Ingredients
– 2 pounds boneless, skinless chicken breasts, cubed
– 4 medium potatoes, peeled and diced
– 1 onion, diced
– 3 carrots, peeled and sliced
– 3 celery stalks, sliced
– 4 cloves garlic, minced
– 4 cups chicken broth
– 2 cups milk
– 2 tablespoons butter
– 2 tablespoons all-purpose flour
– 1 teaspoon dried thyme
– 1 teaspoon dried parsley
– Salt and pepper to taste
Instructions
1. 1. In a large pot or Dutch oven, melt the butter over medium heat.
2. 2. Add the onion, carrots, and celery. Sauté for 5-7 minutes until softened.
3. 3. Stir in the garlic and cook for 1 minute, until fragrant.
4. 4. Sprinkle the flour over the vegetables and stir to coat. Cook for 2 minutes.

Notes
For a thicker soup, you can mash some of the potatoes against the side of the pot. Feel free to adjust the seasoning to your taste. This soup can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
