Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 carrots, peeled and sliced

– 3 celery stalks, sliced

– 3 garlic cloves, minced

– 8 cups chicken broth

– 3 cups shredded rotisserie chicken

– 8 ounces egg noodles

– 2 tablespoons chopped fresh parsley

– Salt and pepper to taste


Instructions

1. – In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened.

2. – Add the garlic and sauté for 1 minute until fragrant.

3. – Pour in the chicken broth and bring to a boil. Reduce heat and let simmer for 10 minutes.

4. – Add the shredded rotisserie chicken and egg noodles. Simmer for 8-10 minutes until the noodles are tender.
