Ingredients

Instructions
1️⃣ Prepare the Noodles:
Soak the long rice noodles in warm water for about 20-30 minutes until softened, then drain and set aside.
2️⃣ Cook the Chicken:
In a large pot, heat the vegetable oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent. Add the chicken pieces and cook until browned on all sides.
3️⃣ Add Vegetables:
Stir in the carrots and cook for another 3-4 minutes until they begin to soften.
4️⃣ Add Broth and Seasoning:
Pour in the chicken broth, soy sauce, oyster sauce (if using), and ginger. Bring to a boil, then reduce the heat and simmer for about 15-20 minutes, or until the chicken is cooked through.
5️⃣ Shred the Chicken:
Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
6️⃣ Add Noodles and Greens:
Add the soaked noodles and bok choy (or spinach) to the pot. Cook for an additional 5-7 minutes, or until the noodles are heated through and the greens are wilted.
7️⃣ Serve:
