Description

Ingredients

– 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

– 1 red bell pepper, cut into 1-inch pieces

– 1 green bell pepper, cut into 1-inch pieces

– 1 red onion, cut into 1-inch pieces

– 10-12 cherry tomatoes

– 2 tbsp olive oil

– 2 tbsp lemon juice

– 1 tsp garlic powder

– 1 tsp paprika

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. – In a large bowl, combine the cubed chicken, bell pepper pieces, onion, and cherry tomatoes.

2. – In a small bowl, whisk together the olive oil, lemon juice, garlic powder, paprika, salt, and black pepper.

3. – Pour the marinade over the chicken and vegetables and toss to coat evenly.

4. – Thread the marinated chicken and vegetables onto metal or wooden skewers.

5. – Preheat grill to medium-high heat. Grill the kabobs for 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.

6. – Serve the Chicken Kabobs hot, garnished with fresh herbs if desired.

Notes

– Soak wooden skewers in water for 30 minutes before using to prevent burning.
