Ingredients
– 8 ounces boneless, skinless chicken breasts, pounded thin and cut into bite-sized pieces
– 4 ounces thinly sliced ham
– 1 cup shredded Swiss cheese
– 8 large flour tortillas
– 2 tablespoons unsalted butter
– 1 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/4 teaspoon paprika
– Salt and black pepper to taste
Instructions
1. 1. In a medium bowl, combine the chicken, garlic powder, onion powder, paprika, salt, and pepper. Toss to coat the chicken evenly.
2. 2. Heat a large skillet over medium heat and melt the butter. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through.
3. 3. Remove the chicken from the heat and stir in the sliced ham and shredded Swiss cheese.
4. 4. Place a tortilla in the skillet and top half of it with 1/4 of the chicken and cheese mixture. Fold the other half of the tortilla over the filling to create a half-moon shape.
5. 5. Cook the quesadilla for 2-3 minutes per side, or until the tortilla is golden brown and crispy.
6. 6. Repeat steps 4-5 with the remaining tortillas and filling to make 4 quesadillas total.
7. 7. Serve the Chicken Cordon Bleu Quesadillas warm, with your favorite dipping sauces on the side.
