Ingredients

– 1 pound boneless, skinless chicken thighs

– 1 cup short-grain rice

– 8 cups chicken broth

– 2 inches fresh ginger, peeled and sliced

– 4 scallions, chopped

– 2 soft-boiled eggs, halved

– 1 teaspoon white pepper

– 1 teaspoon salt


Instructions

1. – In a large pot, combine the chicken, rice, and chicken broth. Bring to a boil over high heat.

2. – Reduce the heat to medium-low, add the ginger, and simmer for 25-30 minutes, stirring occasionally, until the rice has broken down and the porridge has a creamy consistency.

3. – Remove the ginger slices. Shred the chicken and return it to the pot.

4. – Stir in the scallions and season with white pepper and salt.

5. – Ladle the Chicken Congee into bowls and top each serving with a soft-boiled egg.

Notes
