Description

Ingredients

– 2 lbs boneless, skinless chicken breasts, cubed

– 1 onion, diced

– 2 carrots, peeled and diced

– 2 celery stalks, diced

– 2 cups frozen peas

– 2 cups chicken broth

– 1 tsp dried thyme

– 1 tsp dried parsley

– Salt and pepper to taste

– 2 cups Bisquick baking mix

– 2/3 cup milk


Instructions

1. – Preheat oven to 400°F.

2. – In a large oven-safe skillet or baking dish, combine the cubed chicken, onion, carrots, celery, and peas.

3. – Pour the chicken broth over the top and season with thyme, parsley, salt, and pepper.

4. – In a medium bowl, stir together the Bisquick and milk until a thick batter forms.

5. – Spoon the Bisquick batter over the top of the chicken mixture, spreading it to the edges.

6. – Bake for 30-35 minutes, until the Bisquick topping is golden brown and the chicken is cooked through.

7. – Let cool for 5 minutes before serving.

Notes

For a richer flavor, use cream of chicken or cream of mushroom soup in place of some of the chicken broth. You can also add shredded cheese to the Bisquick topping.
