Ingredients
– 2 racks of baby back ribs
– 1/2 cup cherry preserves
– 2 chipotle peppers in adobo sauce, minced
– 1/4 cup brown sugar
– 2 cloves garlic, minced
– 1 tsp smoked paprika
– 1 tsp chili powder
– 1/2 tsp salt
– 1/4 tsp black pepper
Instructions
1. – Preheat grill to medium-high heat.
2. – In a small bowl, mix together the cherry preserves, chipotle peppers, brown sugar, garlic, smoked paprika, chili powder, salt, and black pepper.
3. – Season the ribs generously with the cherry chipotle rub, making sure to coat all sides.
4. – Grill the ribs for 20-25 minutes, flipping occasionally, until slightly charred and cooked through.
5. – Baste the ribs with the remaining cherry chipotle sauce during the last 5 minutes of cooking.
6. – Remove from grill and let rest for 5 minutes before slicing and serving.
Notes
For a spicier version, add an extra chipotle pepper. Leftover ribs can be stored in an airtight container in the refrigerator for up to 3 days.
