Description

Ingredients

– 4 medium russet potatoes, peeled and diced

– 1 onion, diced

– 3 cups chicken or vegetable broth

– 2 cups shredded cheddar cheese

– 1 cup heavy cream

– 2 tablespoons butter

– 2 cloves garlic, minced

– 1 teaspoon dried thyme

– Salt and pepper to taste


Instructions

1. – In a large pot, melt the butter over medium heat.

2. – Add the diced onion and garlic, and sauté until the onion is translucent, about 5 minutes.

3. – Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.

4. – Using an immersion blender, carefully blend the soup until it reaches a creamy, smooth consistency.

5. – Stir in the heavy cream and shredded cheddar cheese. Heat through until the cheese is melted and the soup is heated through.

6. – Season with salt and pepper to taste.

Notes

For a thicker soup, use less broth. For a lighter version, use half-and-half or milk instead of heavy cream. You can also add diced ham or cooked crumbled bacon for extra flavor.
