Ingredients

– 1 lb boneless, skinless chicken breasts, cubed

– 2 bell peppers, sliced

– 1 onion, diced

– 2 cloves garlic, minced

– 1 tsp chili powder

– 1 tsp cumin

– 1 tsp oregano

– 1/2 tsp smoked paprika

– 1/4 tsp cayenne pepper (optional)

– 1 cup shredded cheddar cheese

– 1/2 cup shredded Monterey Jack cheese

– Salt and pepper to taste


Instructions

1. – In a large skillet, cook the chicken over medium-high heat until browned and cooked through, about 6-8 minutes. Remove from the skillet and set aside.

2. – In the same skillet, sauté the bell peppers and onion until tender, about 5-7 minutes.

3. – Add the garlic and spices (chili powder, cumin, oregano, smoked paprika, and cayenne if using) to the skillet. Cook for 1-2 minutes, stirring constantly, until fragrant.

4. – Return the cooked chicken to the skillet and stir to combine. Top with the shredded cheddar and Monterey Jack cheeses.

5. – Cover the skillet and cook for 2-3 minutes, or until the cheese is melted and bubbly.

6. – Serve hot, garnished with fresh cilantro or green onions if desired.

Notes

– For a spicier dish, add more cayenne pepper or a pinch of red pepper flakes.

– You can use any combination of bell peppers, such as red, yellow, or orange.
