Ingredients

– 1 lb Gruyère cheese, grated

– 1 lb Swiss cheese, grated

– 1 clove garlic, minced

– 1 cup dry white wine

– 2 tbsp cornstarch

– 1/4 tsp nutmeg

– 1/4 tsp black pepper

Instructions

1. – In a medium saucepan, rub the inside with the garlic clove.

2. – Add the white wine and heat over medium-low until simmering.

3. – Gradually add the grated cheeses, a handful at a time, stirring constantly with a wooden spoon until completely melted.

4. – In a small bowl, whisk together the cornstarch and 2 tbsp of the hot cheese mixture until smooth.

5. – Stir the cornstarch mixture back into the cheese fondue and cook, stirring constantly, until thickened to a smooth, creamy consistency, about 5 minutes.

6. – Remove from heat and stir in the nutmeg and black pepper.

7. – Transfer the fondue to a warm fondue pot and serve immediately with cubed bread, apple slices, and other desired dippers.

Notes

– For a thicker fondue, add an extra 1-2 tbsp of cornstarch.

– Experiment with different cheese blends like Emmental or Comté.

– Rub the fondue pot with a cut garlic clove for extra flavor.
